Ingredients

50ml Golden Rum
25ml Fresh Lime Juice
10ml Gomme
6-8  Mint Leaves
Top of Soda Water/Lemonade

How to make a mojito

Take the mint leaves in one hand, and clap your hands together. Clapping the mint leaves before putting them into the glass helps to release both smell and flavour.


Squeeze four lime wedges into a glass and drop wedges in on top of the mint leaves. Put the gomme into the glass. Using a muddler, gently muddle the ingredients. Putting the lime wedges on top of the mint leaves prevents the bitter flavour released by bruising the mint leaves. 


Fill the glass to the top with crushed ice and pour in 50ml of golden rum. Gently stir the drink from top to bottom, turning the ingredients. 


If you prefer a sweeter mojito, then top with lemonade. If you prefer a slightly more bitter mojito, top with soda water and a drop of bitters. If you prefer the unadulterated flavour of the mojito, then only a top up of ice is required.

Garnish

An un-squeezed lime wedge and a mint sprig, again clapped in order to release a stronger smell. The increased smell will improve the fresh flavour of the mojito.
